            You'll Have 'No Beef' With Our Burrito

INGREDIENTS

  • 1 Bag, Deeply Rooted Farms’ Mexican Crumbles
  • 40 Tortilla, 10" Whole Grain
  • 1⁄2 10# Can Fiesta Black Beans, Drained
  • 5 lbs. Cheddar Cheese, Shredded
  • 2 1⁄2 c. Salsa

CREDITING

  • Serving = 1 Burrito
  • 3 oz. Meat/Meat Alternate
  • 2 oz. Equivalent Grain

DIRECTIONS

  1. Preheat convection oven to 325°F.

  2. Prepare Deeply Rooted Mexican Crumbles according to the package using a stove or oven. In either application, drain excess liquid after cooking.

  3. Drain black beans. Heat to 135°F and stir in crumbles. Hold in warmer at 135°F.

  4. Lay out tortillas on a sheet pan and portion 2 oz cheese (4 tbsp.) on each tortilla. Spread over middle of the tortilla.

  5. Portion about a heaping 1⁄3 c. of bean and crumble mixture spread out over the cheese and top with a tbsp. of salsa.

  6. Fold each tortilla like a wrap or burrito by tucking the ends in and then rolling it.

  7. Repeat until sheet pan is full.

  8. Place a piece of parchment paper on top of folded tortillas. Place a second sheet pan on top of the first one and repeat Steps 2-6.

  9. Cook burritos in the oven (stacked on top of one another – 4 high with an empty sheet pan on top) at 325°F for 10-12 minutes or until cheese is melted. CCP – hold in warmer at 135°F.

  10. Serve 1 burrito per student and offer salsa and greek yogurt (sour cream).
